Erwan Heussaff Has a Secret Kitchen Trick
It's the secret to cooking perfect lechon pork belly
Foodies and non-foodies alike have been following Erwan Heussaff’s vlogs on YouTube for the celebrity chef and content creator’s fun cooking, travel, and fitness posts.
Since July of this year, he’s been shooting his cooking vlogs in his test kitchen at Hectare One, the lab/studio/office he shares with brother-in-law Nico Bolzico. Interior designer and RL Style Spotter Mara Manalo designed the hip, rustic-industrial headquarters in Makati, and the kitchen is fitted out with Viking Range’s appliances, which he partnered with and cooked for at its launch last September 12.
Some of Erwan’s most-watched recipes on his vlog are from his Crazy For Pork series, and in one of his latest videos, he whips up the perfect lechon pork belly recipe. In the video, he shows how easily you can do this seemingly fancy dish at home, and shares three secrets to creating a perfectly crispy lechon belly:
1. Elevate the pork belly by raising it on a wire rack over the pan, so that the air circulates around the pork and it’s not stewing on a solid surface.
2. Before roasting, baste the pork roll with canola oil using excess lemon grass stalks.
3. Baste the pork with milk after cooking it for two hours.
